2 cups whole wheat flour
1 tbsp baking powder
½ tsp salt
1 tsp ground cinnamon
¾ cup almond milk (or milk of your choice)
½ cup silken tofu whipped (or 2 egg whites)
¼ cup canola oil
¼ cup honey
¼ cup turbinado sugar (or sugar of your choice)
1 cup zucchini shredded
½ cup walnuts
½ dairy free chocolate chips
Preheat oven to 350 degrees. Mix flour, baking powder, salt and cinnamon in a bowl and set aside. In a separate bowl mix milk, tofu, oil and honey. Add sugar, zucchini, walnuts and chocolate chips, mix well. Slowly combine wet and dry ingredients. Bake in a loaf pan coated with cooking spray for 45-50 minutes.
You can sub 1 cup mashed bananas for zucchini.
