Turkey Meatloaf with Onion Gravy and Mashed Potatoes



Turkey Meatloaf
1 package turkey meat
1 egg
1/2 cup whole wheat breadcrumbs
1/4 cup grated cheese
1tsp parsley
Pepper to taste

Spray baking pan with cooking spray. Mix all ingredients together in a bowl. When well incorporated form into a loaf on baking pan. Bake at 400 degrees for 50 minutes to an hour.
If you are vegeterian,  you can replace the ground turkey meat with Gimme Lean Beef which is a great meatless alternative that works the same way as ground meat!   And for the vegans out there you can whip a 1/4 cup of tofu and sub for the egg and use vegan cheese!

Mashed Potatoes
5 red potatoes
2 tbsp light butter
1/2 cup lowfat milk
1/4 cup grated cheese
Salt, pepper & garlic

Peel and cut potatoes in chunks. Put in pot and cover with water. Bring to a boil and cook for 30 mins or until potatoes are soft. Drain potatoes and return to pot. Using the back of a wooden spoon begin to break up potatoes and mash them. Add butter, milk and cheese. Mix well. Add salt pepper and garlic powder to taste. Mix and serve.
Vegan Tip - use Earth Balance in place of butter and sub vegan cheese for the grated cheese.
Onion Gravy
1 tbsp light butter
2 tbsp flour
1 1/2 cups water or chicken broth
1 package onion soup mix

In a small sauce pan melt butter and mix with 1 tbsp flour to form a rue.  Add water and soup mix. Whisk to incorporate the rue. Let cook for a few minutes and whisk in remaining tbsp of flour. Let cook for a few minutes and you should have a nice gravy consistency.
Note- chicken broth will cut the flavor of the onion soup mix. If you prefer a milder flavor use broth.  If you are vegan, sub Earth Balance for butter.

Lemon Ginger Tilapia and Sauteed Artichokes

Sauteed Baby Artichokes
2 tbsp olive oil
2 cloves garlic
9 baby artichokes quartered
1 cup water
Juice of 1 lemon
Salt & Pepper

Heat olive oil and garlic in a saucepan until a light golden brown.  Add artichokes, water and lemon juice.  Season with salt and pepper.  Cook covered 20 minutes or until water is fully evaporated and artichokes are tender.

Lemon Ginger Tilapia
1 shallot chopped
¼ cup olive oil
Juice of 1 lemon
1 tsp Ginger
Salt & Pepper
Whole Wheat Breadcrumbs
2 pieces of Tilapia

In a small bowl, mix shallots, olive oil, lemon juice and ginger with a whisk.  Add salt and pepper to taste.  Spray 2 pieces of foil with cooking spray, make sure the foil is big enough to fold up all 4 sides to make a packet for the fish to cook in.  Place of piece of Tilapia on each piece of foil and pour half of the lemon mixture on each piece.  Sprinkle with breadcrumbs.  Fold up the sides of the foil to close the packet.  Place the foil packets on a baking sheet and bake at 425 degrees for 15-20 minutes.
