I was away from the blog world for a bit as I was on vacation. I seemed to have return to NYC just in time for the weather to turn and it definitely feels like fall is in the air! Just as I am getting back into the blog world, I am getting back to yoga and tried a new amazing studio last night, YoGanesh Yoga (http://www.yoganesh.com/Yo_Ganesh%21/Home.html) in Chelsea and as I left the studio with a chill in the air I could not wait to get home and have some yummy soup. Hope you enjoy it as much as I did!
2 tbsp butter
1 small onion chopped
1 1/4 lbs butternut squash cut in chunks
2 apples cored and chopped (I prefer Gala apples)
1 1/2 cups water
1 1/2 cups vegetable broth
1/2 tsp ground cloves
1/2 tsp nutmeg
1/2 tsp ground ginger
pepper to taste
In a heavy pot melt, butter and add onions. Let cook for around 5 minutes. Add squash, apples, water, broth, cloves, nutmeg and ginger. Bring to a boil, reduce flame, cover and simmer for 30 minutes or until squash and apples are softened. Blend with a hand blender or in a standard blender until smooth. Season with pepper to taste. Serve with a dollop of plain yogurt.

Chocolate Brownies with Dried Cranberries
1/2 cup butter (melted)
1 cup turbinado sugar (or sugar of your choice)
2 eggs (can substitute egg whites)
1 teaspoon vanilla extract
1/3 cup unsweetened cocoa powder
1/2 cup whole wheat flour
1/4 tsp salt
1/4 tsp baking powder
1/4 cup dark chocolate pieces
1/4 cup orange flavored dried cranberries
Preheat oven to 350 degrees. Combine melted butter and sugar with a whisk. Add eggs and vanilla to sugar mixture and mix well. In a separate bowl, mix cocoa, flour, salt and baking powder. Slowly add dry ingredients with wet combining well. Mix in chocolate pieces and cranberries. Pour mixture into an 8x8 pan sprayed with cooking spray. Bake for 25-30 minutes.
